Kawisari uses two options to process coffee fruits:
full wet process and wet-hulled sun process = fully washed process and dry process

The full wet process is a more expensive method than the regular dry variant but it will create a more distinct flavor and perfectly cemented green colored beans . It uses flowing channels where the fruits are dragged and sieved in order to remove their shells before putting them in fermentation stacks where their coatings are taken off by means of repeated washings. The extracted beans are either dried by the sun or by machine dryer to be freed from the last remaining pulp particles.

The wet-hulled sun= dry process process required twice the amount of time for sun-drying.
